Having used many cameras, it is worth looking at the Lumix cameras made by Panasonic, I use the DMC FZ28, which has a fixed 18x optical zoom ( equates to a 500mm on 35mm film), an optical viewfinder and an image stabilizer. The lens is fast and made by Leica. Resolution is 10meg but it can be set lower. This is an easy to use, light and very versatile camera, really all you will need and not expensive; I found one for 300USD at WeGotBetterDeals.com.
This camera will allow you to take handheld shots of birds, and because of the stabiliser and hi res get reasonable results when blown up. A qualtiy doubler is available which would give the equivalent of 1000mm on 35mm film.
There are many good cameras out there at an affordable price. Hope this helps
