Default colour and Western Reef Herons

We often encounter young reef herons which are to say the least, very blotchy in their markings (undecided IF to be a dark or white morph) such as in the first image - it will since we hardly ever see adults like this turn either white or grey/blue - does anybody know what factors are at play that will determine which direction a particular blotchy individual will turn. I have included images of one dark and one white morph (race schistacea).
